McCall Farms operates a cooking and canning plant in Effingham, South Carolina, producing canned vegetables, beans, peas, yams, and Southern specialty foods under national brands. Turning raw ingredients into safe, shelf stable canned products requires precise thermal cooking processes alongside high speed canning line operations, both monitored and controlled through touch screen interfaces on the plant floor.

The Challenge

Food processing plants place a demanding combination of requirements on computing hardware. Sanitation standards call for frequent washdown with water and cleaning chemicals, conditions that quickly damage standard, commercial grade touch screens not designed to be sealed against moisture. At the same time, the cooking process itself is food safety critical: accurate, dependable control over cook times and temperatures is essential to producing safe, consistent canned product, batch after batch.
